If baby doesn't like her bottle's nipple, is the only solution really to switch bottles/nipples? It seems like such a waste :( Any tips on how to get her to accept it?

Try upgrading the teats. It could be due to the flow of the teats rather than the nipple itself. You can poke a hole in the teat with a nipple hole puncher. If your baby still refuses the teat, then you could swap teats. Some brands are compatible with others. E.g. NUK teats are compatible with Pigeon bottles.
