My daughter's two favourite vegetables are okra and eggplant. Any kid friendly recipes that I can try?

haha.. Though I'm never a big fan of okra, my sister loved it. At my own place, it is usually cooked with curry (especially fishhead curry). To introduce the curry version to the little ones, you can try this recipe: Mild Okra and Sweet Potato Curry [taken from: http://homemade-baby-food-recipes.com/okra-baby-food-ideas-tips-and-recipes/] Ingredients: 1 small onion, diced 1 garlic clove, crushed 2 medium tomatoes, chopped pinch of turmeric pinch of cinnamon one small sweet potato, diced 3-4 okra pods, topped, tailed and sliced Saute the onions and garlic in a little oil until tender. Add the turmeric and cinnamon and stir well. Add a little water if the mixture seems very dry. Add the tomatoes and mix thoroughly. Stir in the sweet potato dice, then cover and simmer for 20 minutes. Again, if the mixture seems dry, just add a little more water. Add the sliced okra and re-cover. Cook for a further 5 mins and it is ready for serving.

STEWED EGGPLANT & OKRA 1 onion, diced 2 cloves garlic, minced 1 eggplant, diced into 1/2 inch squares 1 c okra, cut into rounds 2 tomatoes, cored and diced 1/2 tsp smoked paprika 1/2 tsp dried thyme salt & pepper to taste extra virgin olive oil water In a heavy bottom pot, warm 1 tsp olive oil over medium heat. Add the onions and sauté for 5-7 minutes, until translucent. Add the garlic and cook for 1 more minute, until fragrant. Add the smoked paprika and thyme, cook for 30 seconds, then deglaze the pot with a splash of water. Add the eggplant, okra, and tomatoes. Stir to mix well, add a splash of water, place lid on pot, lower heat to medium-low, and let cook for 20-30 minutes until soft. Check every couple of minutes to add more water if necessary, add salt & pepper to taste. Serve over mashed potatoes with sautéed greens on the side.

Those are some of my favourites too! Not too sure how old your daughter is but I usually put okra and eggplant in curries and stews. Another favourite is to coat them in breadcrumbs or tempura batter. You can shallow fry if you don't want them deep fried. How about a middle eastern eggplant puree? Roast the eggplant and remove the skin. Puree with some cumin powder, salt and lemon juice. Add any other boiled veg of your choice if you like. This is a great way of introducing your little one to spices.
