I need a good macaroni recipe - besides the usual mac & cheese please. My son loves it, but I am trying to vary the way it's prepared so he can expand his culinary horizons too! Share recipes if you have any that have worked for your kid (aged 11).

You can try the vegetable macaroni. Here is the recipe for the same: Ingredients: Macaroni – 1 cup Capsicum – 1 Cabbage – 1/2 cup (finely chopped) Tomato – 2 Carrot – 2 Tomato sauce – 3 to 4 tbsp Oil – 2 tbsp Green coriander – 2 tbsp (finely chopped) Lemon juice - 1 tsp Red chilly powder – less than 1/4 tsp Salt – 1 tsp or as per taste Ginger paste – 1 tsp Method 1. Boil the macaroni, first. Take 2 to 3 cups of water in any utensil and place it on flame for heating. When water starts boiling add 1 tsp oil, 1/2 tsp salt and macaroni into it and cook for 10 to 12 minutes. Stir at regular intervals. 2. Wash all the vegetables, capsicum, carrots, tomato and cabbage, thoroughly, pat dry and then chop them finely. 3. Drain the water out of boiled macaroni. Preheat some oil in a pan. When oil is hot, add ginger paste and saute for while. Now add finely chopped carrot and capsicum and again saute for a while. 4. When vegetables get crunchy, add cabbage and tomato into it and cook for another 2 minutes. 5. Now add salt, lemon juice and tomato sauce into it and mix well. Cook for few more minutes. Add macaroni and some green coriander. Stir for 1 minute and cook the macaroni with vegetables. 6. Steaming hot veg macaroni is ready.

Oooh I love macaroni!! For the sauce, I warm up some heavy cream, melt two types of cheese: cheddar (to add some bite) and parmesan (for nutty flavor). In a separate pan, I saute chopped garlic and chopped bacon in butter. And then I toss in steamed broccoli florets. When everything's coated in yummy butter, I toss in cooked macaroni and coat the noodles as well. When all flavors are incorporated, I pour the sauce. And then!!!! I put them all in a casserole, pour grated cheese on top (any quick melt cheese would do), then put it in the oven at about 180C until cheese has melted and turned golden. Enjoy!!! :)

I have a very simple to prepare yet super delicious macaroni recipe, one that I used to love as a kid and now my kids love too. Chop all veggies you want to add, such as capsicum, beans, carrots. Heat a pan, add some butter and fry an egg like a scramble. Now toss the veggies, along with some green peas. Add some soy sauce, a little dash of vinegar, black pepper and ketchup and stir. Add boiled macaroni and salt as per taste. Close the lid and let it cook for a few minutes, garnish with spring onions and serve.

I really like the Asian style fried macaroni and the kids love it too because it's made with ketchup. I fry some garlic and onions till fragrant, put in minced meat and prawns and stir fry. Then I add in the cooked macaroni and put some ketchup as well as oyster sauce. Coat the sauce well with ingredients and they are ready to serve.

Macaroni and meatballs is always a favourite with the kids I know. It's pretty much pasta with meatballs but instead of spaghetti, you use macaroni. You can make a baked variant of this dish by topping it with cheese and broiling it in the oven for a golden brown crust.
