Please share your favorite sweet potato recipe!

I like sweet potato puree! You will need: - Sweet Potato - A table spoon of lemon juice - Natural Yogurt Add these seasonings to taste: - Cumin powder - Curry powder - Turmeric powder - Coriander powder - Sea Salt - Pepper How to: * Steam the sweet potatoes until soft * Remove the skin from the sweet potato and add to a food processor * Add lemon juice and water * Add the dry ingredients once the puree has formed and mix again - The measurements may vary depending on the amount of sweet potatoes you use and how strong you enjoy your flavours - Add as much water as you need to achieve your desired consistency - Add the yogurt as a dressing - I like to have this with sautéed spinach and garlic!

My mum simply steam it and all of us loved it. I prefer the Japanese version which has a nice texture and tastes great after steaming. You can also make sweet potato soup. Just cut the sweet potato into bite size, slice up some ginger (without the skin), bring everything to boil and leave to simmer. Sweeten using rock sugar to taste.

How about Hasselback sweet potatoes? It's a Swedish favourite and one of mine as well! It's basically baked sweet potatoes that are sliced to fan out while it bakes all crispy covered in parmesan cheese and breadcrumbs. For me, it's pretty easy! Slap some honey on top and over baked them! Soooo good. Even my fussy 7 year old daughter loves them.
