Cast-Iron Roast Chicken with Garlic and Herbs worth 250php good for 2-3 meals π©π»βπ³ 1/2 kg of chicken breast with ribs (you can use whatever chicken parts you like) For marinade: 1/2 tsp salt 1 tsp soy sauce 1 tsp ground pepper (or add more if you like) 1 tsp dried rosemary 1 tsp dried thyme leaves 1 tsp powdered oregano 1/8 cup of lemon or calamansi juice For cooking: 2 tbsp cooking oil 4 tbsp of cold butter (optional) 1 bulb of garlic (smashed only) 1 white onion (cut into shreds) 3 medium potatoes (cut into cresent) 15-20 pcs of green beans (ends removed) Marinate the chicken with the herbs and flavorings mentioned above. The longer the better. Make sure to handle the chicken properly because we donβt want salmonella (cover it when you put it back in the fridge) When you are ready to cook, add the cooking oil in the pan, once the pan is hot, add the chicken (make sure the heat is just from low-medium) add the garlic and onions then mix it. Add the butter, then add the green bean on top of everything and cover the pan (this time cook in low heat) let when the green beans are cooked and chicken has turned brown, take out the beans and set it aside. Bring the chicken on the side of the pan and add the potatoes (should be evenly distributed) Put the chicken on top of the potatoes and just let everything simmer in low heat (this brings out the flavors. When the chicken and potatoes are cooked you can add more herbs and lemon juice for final touch.
