You can try mashed or pureed baked butternut squash. Here's a simple recipe! Pre-heat your oven to 180 degC and place the squash on an ungreased baking sheet. Remember to pierce it all over with a fork to allow the steam to escape or else it might explode. Bake for an hour or so until tender. When done, cut the butternut squash lengthwise, then scoop out the seeds and fibres. The flesh can then be scooped from the peel and you start mashing or pureeing!
