It kind of depends on what type of food your child prefers. If he/she likes cold food, overnight oats is easy to make, or sandwiches (like with ham and cheese, or egg mayo perhaps?) are some good options. If he prefers something crunchy/chewy, toasting some bread for the crunch factor and simply need to spread some peanut butter or jam (depending on whether he/she prefers sweet or savory food) or if there's time, fry an egg for the sandwich. French toast is a quick and easy (and tasty) option as well. Personally, I think some crackers topped with cottage cheese and some sliced fruits makes for a quick and simple breakfast as well. But my personal go-to would be overnight oats. :)

I'm quite a fussy eater myself but I find that I can never say no to breakfast classics like Pancakes and French Toast. You can make kiddie versions of these for your toddlers, if they are not allergic to wheat or eggs. Here are some yummy recipes I love. Of course, you can tweak the sugar content to make it baby friendly. For the pancake batter, you can prepare them beforehand and store them in squeeze bottle for easy access later. http://www.kidspot.com.au/kitchen/recipes/baby-banana-pancakes-1730 http://www.kidspot.com.au/kitchen/recipes/french-toast-sticks-2318
