I want to pack some sandwiches for an upcoming picnic with my 6yo twins, but want it to have some green veggies. Could anybody suggest some ideas please?

You can try these two following yum recipes - 1. Carrot and Green Peas Sandwich - Ingredients 8 bread slices , lightly buttered 3/4 cup par-boiled and finely chopped carrots 1/2 cup boiled and slightly mashed , green peas 1/2 cup grated paneer (cottage cheese) 1/4 cup garlic flavoured cheese spread 1/4 tsp finely chopped green chillies salt to taste Method Step1. Combine the carrots, peas, paneer, cheese spread and green chillies. Divide into 4 portions and keep aside. Step2. Spread a portion of the filling on a slice of bread. Top with another slice of bread. 2. Cheese and Spring Onion Sandwich recipe - Ingredients 12 toasted bread slices butter for spreading To Be Mixed Into A Cheese and Spring Onion Stuffing: 1/2 cup cheese spread 1/2 cup finely chopped spring onion whites and greens 1/2 cup mayonnaise 1/4 cup finely chopped capsicum (red, yellow and green) 1/4 cup milk 1 1/2 tsp dry red chilli flakes 1 tsp grated garlic salt and freshly ground black pepper to taste Method Step1. Divide the stuffing into 6 equal portions and keep aside. Step2. Apply little butter on each bread slice and keep aside. Step3. Place a bread slice on a clean dry surface with the buttered side facing upwards. Spread a portion of the cheese and spring onion stuffing evenly over it and sandwich it using another bread slice with the buttered side facing downwards.

How about egg spinach grilled cheese sandwiches? They are easy to make and contain ingredients that you probably have in your fridge already: egg, cheese, spinach, butter and bread. After frying the egg, assemble the sandwich and butter the top and base of the sandwich. Using the same pan you used to fry the egg, grilled the sandwich till golden brown. If you have a panini press, you can use that too. The result will be warm, melty sandwich oozing with eggy and cheesy goodness. The spinach add a healthy touch!
