How do you deal with an overly defensive helper? My cousin's maid always gets defensive when asked a simple question that may not even be arrowed at her.

Agree with Vanessa. Have a chat with her. I'm guessing it could be the fear of miscommunication or simply her manner of speaking that made her came across as being defensive. Best to find out what are her concerns and address them accordingly.
