Can I possibly OVER feed my baby? They are smarter than goldfish and know when to stop eating right?

If your baby is direct latch, the likelihood of overfeeding is minimal. Most DL babies don't overfeed themselves unless they have a bit of reflux problem. Reflux problems are common in the first 2 months in newborns. In such cases, a baby might take in more than he/she should, as they are trying to soothe the irritation from the reflux. But at the same time, their tummy is still small and digestive tract immature and is more likely to regurgitate the milk out (spit outs), which leads to the impression that baby is overfed. As long as the spit outs are not excessive or too frequent, it should be fine.

If you are nursing and bottle feeding, you could risk over feeding. Best to fully latch on as much as baby wants to. Usually won't over feed at the breast.

Of course they do! but if you're wise enough, you should know your baby tummy size for your guidance in feed him.

This is a good indication for how much you should be bottle feeding your baby in the first one month.
