My baby is 8 months old. I have observed some moms give food in small chunks to thier 8 month old. For example they give roti, finger food. I always have a question in my mind- is this type of food safe for an 8 month old? In case the baby gulps a whole chunk of a boiled carrot or chapati. Doesnt it increase the risk of choking?

definitely yes Anita, you can start giving bites of idli, paratha, soft roti to your baby at 8 months. yes, your baby does not have a full set of teeth, but will still use the gums to make the food softer and break it down. make the bites such that they are not too tiny to be swallowed as a whole, but can be broken up. of course supervise at all times
