I've only tasted sinigang na bangus (milk fish) sa miso and I think it's really good. Since miso gives a strong flavour, it matches perfectly with the bangus that is kinda bland. Also milk fish is a food low in Sodium. I've only tried salmon belly and bangus belly for sinigang sa miso and both taste great. If you use salmon belly, the oil mixes with the soup which makes it more yummy.

I've read that tuna and tilapia can also be used, as well as hito. But if you'd ask what I prefer, I like bangus and maya maya even better for Sinigang sa Miso.

Salmon and Maya Maya are both great for Sinigang sa Miso! But among all the fish used for it, I love bangus the most. :)
