Hey Parents, Any suggestion on quick lunch fixes for toddlers? Have to pack lunch for my lo now once a week and I need something quick and easy but nutritious. Suggestions are greatly appreciated. Thanks!

How about mini pizzas? They are easy to make and you can pretty much use whatever toppings you have available in your fridge and pantry. Also, since you can customise the toppings on the mini pizza, you can have different flavours each time and your toddler will not get sick of them. Some days you can have savoury ingredients, and other days you can have sweet ones. You can use a bread or toasted breakfast muffins as the base. For toppings, you can use fruits, veggies and your toddler's favourite ground meats or even tuna. For the sauce, you can make a quick sauce with cream cheese, tomato puree or cheddar cheese. Here's a recipe you can try :) http://www.annabelkarmel.com/recipes/mini-pizzas

Some of the sample dishes i make for my LO - pancakes can accompany with fruits (can use cereal instead of flour, or mashed banana and mix with egg) - scramble eggs(can put green beans, tomato, onion, etc) - pasta (many recipes and sauce to mix and match, 1 of the recipe is use fresh milk with cheese to make carbonara ) - sandwiches (self make egg mayo, cheese, or can use sweet potato as filling too) - french toast (with jam) - potato salad - sushi (very easy to roll) - mee tai mak (silver needle noodles. Can mix with chicken breast and other veggy that your LO like) - Rice balls ( can mix with salmon, veggy, etc)
