Ingredients

½ green bell pepper , chopped

½ red bell pepper , chopped

1 large tomato , chopped

½ cucumber , peeled and chopped

1 carrot , peeled and grated

¼ cup extra virgin olive oil

¼ cup balsamic vinegar

1 clove garlic , minced

½ tsp Dijon Mustard

½ tsp salt and pepper to taste

4 (12-inch) whole grain wraps (high-fiber)

1 cup (8 oz) hummus

In a bowl, mix the cucumber, bell peppers, tomato, and carrots.

In a separate bowl, add the olive oil, garlic, mustard and vinegar and whisk together. Season with salt, and pepper. Pour this over bell pepper mixture and toss well to combine evenly.

For the wraps, spread ¼ cup hummus over one tortilla (leave 1 in borders around the edge of the tortilla. Top with ½ cup spinach. Make a layer with ¼ of the bell pepper mixture. Roll the tortilla, cut the wrap in half and serve.
