Ingredients

½ tsp olive oil

1 medium carrot , chopped into small chunks

1 medium parsnip , chopped into small chunks

1-2 tsp mixed herbs

½ cup dried brown rice

1½ cups water

1 cup cheddar cheese , grated

Place the olive oil in a small saucepan. Sauté the carrots and parsnips to soften them.

Add the herbs and brown rice, stirring for another minute or so, until fragrant.

Add the water, and bring to a boil. Lower the heat and simmer for 40 minutes, until rice is cooked.

Stir in the cheese until melted. Serve.
