Ingredients

½ cup old fashion rolled oats

1 ½ cup water

Salt

½ tsp cinnamon

1 cup egg white

1 tsp vanilla extract

1 super ripe banana (mashed)

½ cup coconut milk

½ cup mango
-
½ cup kiwi

4 tbsp cashews (crushed)

In a medium pot, combine oats with water and cinnamon. Add a pinch of salt. Let the mixture simmer over medium-high heat and then lower to medium heat. Stir every now and then for about 5mins or until water has been fully absorbed but keeping it moist and thick.

In a bowl, create froth from the egg whites by beating them. Add this into the pot with oats and stir until it becomes creamy and fluffy.

Add the vanilla and banana. Mix well until properly combined. Turn off the heat and cover. Let it sit for 3mins.

Add toppers and then serve.
