Ingredients
- ½ cup old fashion rolled oats
- 1 ½ cup water
- Salt
- ½ tsp cinnamon
- 1 cup egg white
- 1 tsp vanilla extract
- 1 super ripe banana (mashed)
- ½ cup coconut milk
- ½ cup mango
- ½ cup kiwi
- 4 tbsp cashews (crushed)
Steps
- In a medium pot, combine oats with water and cinnamon. Add a pinch of salt. Let the mixture simmer over medium-high heat and then lower to medium heat. Stir every now and then for about 5mins or until water has been fully absorbed but keeping it moist and thick.
- In a bowl, create froth from the egg whites by beating them. Add this into the pot with oats and stir until it becomes creamy and fluffy.
- Add the vanilla and banana. Mix well until properly combined. Turn off the heat and cover. Let it sit for 3mins.
- Add toppers and then serve.
