THAI MEATBALL LETTUCE WRAPS
Ingredients

1.5 pound lean ground pork For the meatballs:

4 scallions, thinly sliced

1 tbsp ginger, finely minced
-
2 cloves garlic, finely minced
-
1 1/2 tsps fish sauce
-
1/2 tsp sriracha
-
1 tsp salt
-
2 tbsps lime juice (1 – 2 limes)
-
1–2 tablespoons sweet chili sauce (for coating the meatballs once they are cooked)

1 14 oz bag cole slaw mix (the kind with regular cabbage, purple cabbage, and carrots) For the coleslaw:

10 basil leaves, rolled up and sliced
-
5 mint leaves, rolled up and sliced
-
3 tbsps cilantro, chopped
-
1 scallion, finely sliced
-
1/4 cup rice vinegar
-
5 tsps light mayonnaise
-
4 tsps sweet chili sauce
-
1 head of iceberg lettuce or romaine lettuce
-
Extra lime for garnish
-
Extra cilantro for garnish (optional)

Preheat ang oven to 200 degrees C
-
Para sa meatballs, ihalo lahat ng ingredients except yun sweet chili sauce sa isang medium na bowl gamit ang kamay mo (the pork, scallions, ginger, garlic, fish sauce, sriracha, salt, at lime juice).

Ibasa ang paper towel ng konting vegetable oil, at pahiran sa baking sheet para ma-grease.

Gumamit ang 1 heaping tbsp ng meat mixture, gumawa ng meatballs at ilagay sa baking sheet.

Bake ang meatballs ng 15 minutes o hangang luto na sila sa gitna, i-flip ng isang beses.

Habang niluluto ito, gawin ang coleslaw. Sa medium na bowl, ipagsama ang mga coleslaw ingredients (yung bag of coleslaw mix, basil, mint, cilantro, at scallions)

Para gawin ng dressing, i- whisk ang rice vinegar, mayonnaise at sweet chili sauce sa maliit na bowl at ibuhos sa coleslaw, at haluin. Itabi ang meatballs na tapos na maluto.

Kapag tapos na ang meatballs, ilipat sa isang bowl at ihalo sa 1-2 tablespoons sweet chili sauce (light lang dapat ang coating) Para ma-assemble, maglagay ng isang scoop ng coleslaw sa lettuce, at i-top ng 3 meatballs.

Top with a little extra cilantro (optional), at squeeze sa lime juice (highly recommended!)
