Thai fish in coconut milk

Ingredients

  • 1/2 fillet of white fish
  • 1
  • 400 ml coconut milk
  • 3
  • Black pepper
  • 1 tsp

Steps

  1. Wash and score the fish in a criss cross manner. This will allow the coconut milk to seep into the fish
  2. Pat the fish dry and season with black pepper
  3. In a pan, fry garlic in a teaspoon of oil
  4. Once brown add in coconut milk. When the coconut milk starts to boil, switch to low boil and add in sliced fish
  5. Add in chopped coriander, close lid and allow to boil for 5 mins.
  6. Mesh with a fork (or blend) to make it a smooth consistency for baby to eat
  7. Serve alone or with baby pureed cereal
