Spagheti Carbonara

Ingredients

  • 2 tbsp butter
  • 100 g pancetta , or thick-cut bacon, diced
  • 1 garlic clove
  • 350 g spaghetti
  • 2 eggs , beaten
  • ½ cup Parmesan cheese , freshly grated
  • ½ cup pecorino cheese , freshly grated
  • Salt and pepper

Steps

  1. Cook the spaghetti according to package instructions. Drain, and set aside.
  2. In a large saucepan, melt the butter and add the pancetta and garlic. Sauté for 5 minutes, or until garlic turns brown. Discard the garlic; continue cooking the pancetta for another 5 minutes.
  3. Add the spaghetti to the pan. Remove from heat, and pour in the eggs, ¼ cup parmesan, and ¼ cup pecorino. Season with salt and pepper. Mix well, coating the pasta with the eggs. Add the remaining cheese. Mix again, and serve.
