Ingredients

½ cup fresh spinach , chopped

Bowl of ice-cold water

1 tbsp crumbled paneer

1 tbsp dahi (preferably from cows)

Blanch the spinach: bring a large pot of water to a boil. Submerge the spinach leaves in the boiling water for 40 seconds. Drain, and immediately transfer and soak the spinach into the bowl of ice-cold water.

Combine blanched spinach, paneer, and dahi in a blender or food processor. Puree until smooth.

Serve immediately.
