Ingredients

½ tsp minced ginger

½ tsp minced garlic

¼ tsp mild curry powder

¼ tsp garam masala

1 tbsp tomato paste

6 tbsp coconut milk

150 g fresh, washed spinach

225 g paneer cheese , chopped into small cubes

In a saucepan over low heat, sauté the ginger and garlic until soft. Add the curry powder and garam masala; sauté until fragrant. Stir in the tomato paste and coconut milk, cooking until a sauce forms.

Add the spinach into the sauce in handfuls. Stir until wilted. Remove from heat.

Using an immersion blender, puree until smooth.

Add the paneer cubes and mix well.

Serve over rice or couscous.
