Mango and Lime Lassi

Ingredients

  • 1 mango
  • Finely grated rind and juice of 1 lime
  • 1 tbsp lemon juice
  • 2 tsp caster sugar
  • ½ cup natural plain yogurt
  • Mineral water
  • 1 extra lime , halved, for garnish

Steps

  1. Peel the mango and remove the seed. Carve out the flesh and put in a blender or food processor. Add the lime rind, lime juice, lemon juice, sugar, and yogurt. Blend until completely smooth, scraping the sides of the bowl, if necessary. If too thick, thin it down with mineral water, adding a few tbsp at a time.
  2. Serve immediately with half a lime on the side of each glass.
