Lemongrass Juice

Ingredients

  • 500 g lemongrass
  • 1½ cups caster sugar
  • ½ tsp salt
  • Ice cubes , for serving

Steps

  1. In a large pot, boil 2 liters of water over medium heat. Add the lemongrass, and simmer for 8 to 10 minutes. Remove from heat. Strain the lemongrass juice into a large, clean pan.
  2. Stir the sugar and salt into the pan until dissolved. Bring to a boil, over medium heat, for 30 seconds.
  3. Remove from heat. Let cool, and refrigerate to chill. Serve cold, over ice.
