Ingredients

8 country-style bread slices

150 g mozzarella cheese , drained and sliced

2 eggs

¾ cup milk

All-purpose flour , for dusting

4 tbsp olive oil

2 tbsp butter

Salt and pepper

Sandwich the mozzarella between two slices of bread.

Beat the eggs and milk in a shallow dish. Season with salt and pepper. Dust the sandwiches with the flour. Place the sandwiches, one by one, in the beaten egg mixture. Press down gently with a spatula so the bread absorbs some of the mixture.

In a large skillet, heat the olive oil and butter over medium-high heat. Add the sandwiches, cooking each side until crisp and golden brown, about 2 minutes. Remove with a spatula and drain on paper towels. Serve immediately.
