Chicken with Goat Cheese and Basil

Ingredients
  • 2 boneless chicken breasts , with skin
  • 2 large fresh basil leaves
  • 3-4 oz goats cheese
  • Kosher salt , for seasoning
  • Olive oil
  • Ground pepper
Steps
  1. Preheat oven to 75°C.
  2. Arrange the chicken breasts on a baking sheet. Using your fingers, loosen the skin. Make sure to leave an edge attached.
  3. Slice the goat cheese into ½ inch thick slices place two slices under the skin of the chicken breast. Layer it with a large basil leaf.
  4. Rub the chicken pieces with olive oil and sprinkle salt and pepper generously over it. Olive oil will keep from chicken from getting dry.
  5. Place the chicken in the oven and bake until the skin turns golden brown and meat is cooked through (about 30-40mins).
  6. Serve immediately.
