Chicken Pesto Veggie Meatballs

Ingredients

  • 1 lb ground chicken breast
  • ½ medium red bell pepper , deseeded and diced
  • 1 medium carrot , peeled and diced
  • 1 cup zucchini , peeled and diced
  • 3 tbsp pesto
  • ½ cup plain bread crumbs
  • ½ tsp salt
  • 1 tbsp olive oil

Steps

  1. Preheat the oven to 375°F. Line a baking sheet with foil, and drizzle with oil.
  2. In a large bowl, mix the zucchini, carrot, and bell pepper. Add in the pesto, bread crumbs, and salt. Stir to combine.
  3. Add the ground chicken breast. Using your hands or a large fork, mix in the chicken with the vegetable mixture, until well-combined.
  4. Using your hands, form small meatballs out of the mixture, and place them on the baking sheet. Bake in the oven for 13 minutes, until cooked through. Serve with your favorite pasta.
