Ingredients

½ celery stick , chopped into small pieces

1 small carrot , cut into small chunks

500 g boneless, skinless chicken thighs, cut into chunks

Few chives , snipped

Oil , for greasing

Heat oven to 400°F. Place the celery, carrot, chicken, and chives in a food processor, and blitz until finely chopped.

Line a baking sheet with foil, and grease with the oil. Shape the mixture into small meatballs, and place on the prepared baking sheet. Bake in the oven until browned and cooked through, about 10 minutes.

Serve with boiled rice and veggies.
