Cheesy Sweet Potato, Cauliflower, and Leek Puree

Ingredients
  • 3 tsp butter
  • 25 g leeks , washed and sliced
  • 1 sweet potato , peeled and chopped
  • 1 cup boiling water
  • 75 g cauliflower florets scant
  • ¼ cup cheddar cheese , grated.
Steps
  1. In a saucepan, sauté the butter and leek for about 3 minutes until soft.
  2. Add the sweet potato and boiling water. Cover and cook for 5 minutes.
  3. Add in the cauliflower and boil for about 5 minutes.
  4. Strain the vegetables, reserving the liquid.
  5. Place the vegetables, 1/3 cup of the reserved liquid, and grated cheese in a blender. Puree until smooth.
