Cheesy Sweet Potato, Cauliflower, and Leek Puree

Ingredients
- 3 tsp butter
- 25 g leeks , washed and sliced
- 1 sweet potato , peeled and chopped
- 1 cup boiling water
- 75 g cauliflower florets scant
- ¼ cup cheddar cheese , grated.
Steps
- In a saucepan, sauté the butter and leek for about 3 minutes until soft.
- Add the sweet potato and boiling water. Cover and cook for 5 minutes.
- Add in the cauliflower and boil for about 5 minutes.
- Strain the vegetables, reserving the liquid.
- Place the vegetables, 1/3 cup of the reserved liquid, and grated cheese in a blender. Puree until smooth.
