Ingredients

1 cup dried couscous

1 cup boiling water

1 tbsp mixed Italian herbs

3 tbsp tomato paste

1½ cups strong cheddar cheese , grated

Olive oil , for greasing and brushing the tops of the nuggets

Pre-heat the oven to 400°F.

Place the couscous and herbs in a bowl. Pour 1 cup of boiling water into the bowl, and cover with a plate. Leave for 5 minutes.

In a saucepan, cook the cheese and tomato puree until the cheese begins to melt. Add in the couscous and stir until well-combined.

Prepare the baking tray: line it with parchment paper, and brush with olive oil.

Using your hands, shape the couscous into small nuggets. Place them on the prepared baking sheet, and brush the tops with a bit of olive oil.

Bake in the oven for 15 minutes for a softer texture, or 25 minutes for a crunchier texture. Let cool, then serve.
