Ingredients

Florets from one small to medium-sized cauliflower

5 garlic cloves

1-2 tsp smoked paprika

120 g cheddar cheese , grated

1 egg

200 g (3 cups) of breadcrumbs

A handful of chopped fresh chives

Olive oil

Preheat oven to 450°F. Place cauliflower florets and garlic cloves in a baking dish. Toss with a bit of olive oil. Sprinkle smoked paprika on top, and roast in oven for 20-25 minutes, or until browned and crispy. Let cool out of the oven for 15 minutes.

In a food processor, pulse the florets, cheddar cheese, chives, and egg. Add the bread crumbs in stages until a dough is formed. Don’t overprocess the dough into a paste—make sure it maintains a bit of texture.

Refrigerate the dough for a few hours. Make sure it is completely chilled!

Preheat the oven to 390°F. Line a baking tray with parchment paper brushed with a bit of olive oil.

Using your hands, form the dough into nuggets. Lightly brush the tops with olive oil.

Bake until they turn brown and crispy, about 15 minutes. 7. Cool for 5 minutes before serving.
