Ingredients
- Florets from one small to medium-sized cauliflower
- 5 garlic cloves
- 1-2 tsp smoked paprika
- 120 g cheddar cheese , grated
- 1 egg
- 200 g (3 cups) of breadcrumbs
- A handful of chopped fresh chives
- Olive oil
Steps
- Preheat oven to 450°F. Place cauliflower florets and garlic cloves in a baking dish. Toss with a bit of olive oil. Sprinkle smoked paprika on top, and roast in oven for 20-25 minutes, or until browned and crispy. Let cool out of the oven for 15 minutes.
- In a food processor, pulse the florets, cheddar cheese, chives, and egg. Add the bread crumbs in stages until a dough is formed. Don’t overprocess the dough into a paste—make sure it maintains a bit of texture.
- Refrigerate the dough for a few hours. Make sure it is completely chilled!
- Preheat the oven to 390°F. Line a baking tray with parchment paper brushed with a bit of olive oil.
- Using your hands, form the dough into nuggets. Lightly brush the tops with olive oil.
- Bake until they turn brown and crispy, about 15 minutes. 7. Cool for 5 minutes before serving.
