Ingredients

½ medium onion , chopped

½ small tomato , chopped

320 g lean beef , diced

1 tsp vegetable oil

1 tbsp tomato puree

1 cup water

80 g spinach

40 g frozen peas

White rice , cooked

In a large saucepan, heat the oil and add the diced beef. Sauté until browned. Add the onion and tomatoes, and cook for 5 minutes.

Add the tomato puree, turmeric, chilli powder, curry powder, and cup of water; bring to a boil. Cover, and simmer for 20 minutes, until the beef is tender and cooked through. If needed, add more water.

Meanwhile, boil some water in a small saucepan. Add the frozen peas. Cook until soft, about 5-6 minutes.

Roughly chop the spinach and add to the curry pan. Cook for another 3-4 minutes. Remove from heat.

Serve with rice and peas on the side.
