Barley & Candied Winter Melon Drink
Ingredients

1/2 cup barley pearled or hulled

1 cup wintermelon candied

8 cups water

2 pandan leaves rinsed and knotted

White sugar to taste

Rinse and soak barley for 30 minutes. Drain.

Place barley, candied winter melon, water, and pandan leaves in a large pot. Bring to a boil, reduce heat, and simmer for an hour.

Remove and allow to cool. Serve warm or chilled.
