Yup! You get to choose but also depends if they are available throughout your pregnancy and around the time of your edd.

Yes. If the doctor is away, they will have the hospital standby for that day around to deliver your baby. This is however different for private hospitals. If your doctor is not available and you go into active labour, the standby is one that is allocated by your doctor not by the hospital that will be there for your delivery.
