A good idea would be to experiment with parathas depending on the vegetables your kiddo likes. Parathas are fairly quick to make and a lot of vegetables can be used while making them. For example: Cabbage, cauliflower, potato, carrot, radish etc. This way, you can introduce variety in your kid's tiffin as also save time. You will also be able to ensure that he stays away from junk food.
