If you have leftover meats (like chicken or beef), I suggest you try making pytti panna, which is basically a Swedish potato hash dish. Traditionally, this meal is made out of leftover meats and potatoes (a staple in Sweden). You can spice it up with herbs and throw in some cheese to make it more substantial. Serve it up with a sunny-side up egg and you're good to go! Seriously, one of my favourite weekday dinners when I have no time to cook "real" food.
