How many outfits/pieces of clothing must I have for baby 0-3 months? I think I went a little excessive! I have: 8 swaddles 8 mittens 8 booties 3 shoes 8 full length pyjamas 10 onesies 20 dresses 10 tops 10 bottoms 4 bips 10 wash cloths

I think you're good for now :) it depends on your baby and how fast they grow. Some babies outgrow their clothes really fast so no point buying too many while some babies, like my friend's little boy - has been wearing his 0-3mths clothes for nearly 5 months now.
