Ingredients
- ½ green bell pepper , chopped
- ½ red bell pepper , chopped
- 1 large tomato , chopped
- ½ cucumber , peeled and chopped
- 1 carrot , peeled and grated
- ¼ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 1 clove garlic , minced
- ½ tsp Dijon Mustard
- ½ tsp salt and pepper to taste
- 4 (12-inch) whole grain wraps (high-fiber)
- 1 cup (8 oz) hummus
Steps
- In a bowl, mix the cucumber, bell peppers, tomato, and carrots.
- In a separate bowl, add the olive oil, garlic, mustard and vinegar and whisk together. Season with salt, and pepper. Pour this over bell pepper mixture and toss well to combine evenly.
- For the wraps, spread ¼ cup hummus over one tortilla (leave 1 in borders around the edge of the tortilla. Top with ½ cup spinach. Make a layer with ¼ of the bell pepper mixture. Roll the tortilla, cut the wrap in half and serve.
