Vegetable and Brown Rice Pot

Ingredients

  • ½ tsp olive oil
  • 1 medium carrot , chopped into small chunks
  • 1 medium parsnip , chopped into small chunks
  • 1-2 tsp mixed herbs
  • ½ cup dried brown rice
  • 1½ cups water
  • 1 cup cheddar cheese , grated

Steps

  1. Place the olive oil in a small saucepan. Sauté the carrots and parsnips to soften them.
  2. Add the herbs and brown rice, stirring for another minute or so, until fragrant.
  3. Add the water, and bring to a boil. Lower the heat and simmer for 40 minutes, until rice is cooked.
  4. Stir in the cheese until melted. Serve.
