Ingredients
- ½ tsp olive oil
- 1 medium carrot , chopped into small chunks
- 1 medium parsnip , chopped into small chunks
- 1-2 tsp mixed herbs
- ½ cup dried brown rice
- 1½ cups water
- 1 cup cheddar cheese , grated
Steps
- Place the olive oil in a small saucepan. Sauté the carrots and parsnips to soften them.
- Add the herbs and brown rice, stirring for another minute or so, until fragrant.
- Add the water, and bring to a boil. Lower the heat and simmer for 40 minutes, until rice is cooked.
- Stir in the cheese until melted. Serve.
