Sunshine Toast

  • 1 slice of whole wheat bread
  • 1 tbsp olive oil
  • 2-3 mushrooms , sliced
  • 1 tomato , halved
  • 1 small egg
  • Pepper to taste


  1. Cut a hole in the middle of the slice of bread using a 2-inch circular cookie cutter.
  2. In a non-stick frying pan, heat the oil and sauté the mushrooms and tomato, cut-sides down, until the mushroom brown (about 3-4 minutes.) Turn the tomato over.
  3. Move the mushrooms and tomato to the side of the pan. Place the bread in the center. Crack the egg and carefully pour it into the hole in the center of the bread. Lower the heat, and cook the egg through. Remove from heat.
  4. Season with pepper. Serve the toast with the mushrooms and tomato.
