- ½ cup fresh spinach , chopped
- Bowl of ice-cold water
- 1 tbsp crumbled paneer
- 1 tbsp dahi (preferably from cows)
- Blanch the spinach: bring a large pot of water to a boil. Submerge the spinach leaves in the boiling water for 40 seconds. Drain, and immediately transfer and soak the spinach into the bowl of ice-cold water.
- Combine blanched spinach, paneer, and dahi in a blender or food processor. Puree until smooth.
- Serve immediately.
