Ingredients
- ½ tsp minced ginger
- ½ tsp minced garlic
- ¼ tsp mild curry powder
- ¼ tsp garam masala
- 1 tbsp tomato paste
- 6 tbsp coconut milk
- 150 g fresh, washed spinach
- 225 g paneer cheese , chopped into small cubes
Steps
- In a saucepan over low heat, sauté the ginger and garlic until soft. Add the curry powder and garam masala; sauté until fragrant. Stir in the tomato paste and coconut milk, cooking until a sauce forms.
- Add the spinach into the sauce in handfuls. Stir until wilted. Remove from heat.
- Using an immersion blender, puree until smooth.
- Add the paneer cubes and mix well.
- Serve over rice or couscous.
