Ingredients

  • 1 tbsp olive oil
  • ½ cup white onion , chopped
  • 3 baby carrots , chopped
  • 1 can diced tomatoes
  • 1 15 oz can kidney beans , rinsed
  • 3 cups low sodium chicken broth
  • 2 cups baby spinach
  • Kosher salt
  • Pepper , ground,
  • ½ cup whole wheat penne pasta

Steps

  1. In a pot pan, heat oil in medium high heat.
  2. Sautee onions and carrots until soft.
  3. Pour the broth. Add diced tomatoes and beans. Season with salt and pepper and stir well. Allow for it to simmer.
  4. Add the uncooked penne and stir frequently. Just when it’s about to boil, reduce the heat to medium low and cook off for 10mins just when the pasta becomes al dente.
  5. Right before serving, stir in the spinach.
  6. Serve hot
