Lime Chicken

Ingredients

  • 600 g chicken fillet (thigh or breast as a healthier option)
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 lime , zested
  • 4 tbsp lime juice (same lime can be used)
  • 3 tbsp brown sugar
  • 2 garlic cloves , minces
  • 1/4 tsp pepper
  • 2 tbsp chopped cilantro

Steps

  1. Pound chicken breast to about 1.7 cm thick (not required if using thigh).
  2. In a bowl, mix olive oil, soy sauce, lime zest, juice, brown sugar, garlic and cilanto. Season with pepper.
  3. Place chicken and marinade in a zip-type plastice, make sure the meat is marinated evenly. Refrigerate for at least 12hours
  4. Remove chicken, discard Marinade.
  5. Heat oil in a skillet on medium high heat. Cook chicken for 3 minutes on each side or until it turns golden brown.
  6. Garnish with more cilantro and a slice of lime. Serve.
