Ingredients
- 2 lb or 1kg kumquats
- 5 cups caster sugar
- 1 tbsp salt
- Ice cubes , for serving
Steps
- Wash the kumquats very well, and squeeze the juice into a large pan. Pour in 2 liters of water, and mix well. Add the sugar and salt. Bring to a boil over medium heat.
- Remove from heat. Strain the mixture into a large, heatproof pitcher. Let cool before placing in the refrigerator to chill.
- Pour into 8-10 glasses, and serve cold over ice.
