Ingredients
- 1 cup dried couscous
- 1 cup boiling water
- 1 tbsp mixed Italian herbs
- 3 tbsp tomato paste
- 1½ cups strong cheddar cheese , grated
- Olive oil , for greasing and brushing the tops of the nuggets
Steps
- Pre-heat the oven to 400°F.
- Place the couscous and herbs in a bowl. Pour 1 cup of boiling water into the bowl, and cover with a plate. Leave for 5 minutes.
- In a saucepan, cook the cheese and tomato puree until the cheese begins to melt. Add in the couscous and stir until well-combined.
- Prepare the baking tray: line it with parchment paper, and brush with olive oil.
- Using your hands, shape the couscous into small nuggets. Place them on the prepared baking sheet, and brush the tops with a bit of olive oil.
- Bake in the oven for 15 minutes for a softer texture, or 25 minutes for a crunchier texture. Let cool, then serve.
