Ingredients
- ½ medium onion , chopped
- ½ small tomato , chopped
- 320 g lean beef , diced
- 1 tsp vegetable oil
- 1 tbsp tomato puree
- 1 cup water
- 80 g spinach
- 40 g frozen peas
- White rice , cooked
Steps
- In a large saucepan, heat the oil and add the diced beef. Sauté until browned. Add the onion and tomatoes, and cook for 5 minutes.
- Add the tomato puree, turmeric, chilli powder, curry powder, and cup of water; bring to a boil. Cover, and simmer for 20 minutes, until the beef is tender and cooked through. If needed, add more water.
- Meanwhile, boil some water in a small saucepan. Add the frozen peas. Cook until soft, about 5-6 minutes.
- Roughly chop the spinach and add to the curry pan. Cook for another 3-4 minutes. Remove from heat.
- Serve with rice and peas on the side.
