Baked Pesto Parmesan Salmon

  • 2-6 salmon fillets
  • 3 tbsp pesto
  • 2 tbsp fresh breadcrumbs
  • 2 tbsp Parmesan cheese , grated


  1. Preheat oven to 325°. Flatten a piece of parchment paper on a baking sheet and place the salmon fillets at least 3 inches apart.
  2. Top each fillet with 1 ½ tablespoons of pesto and spread evenly to coat it well.
  3. In a bowl, mix the breadcrumbs and parmesan cheese. Again, top fillets with the breadcrumb mixture.
  4. Place the salmon in the oven and cook for 12-15 minutes for medium doneness. To get a golden brown crust, turn the oven to broil and heat for 1 min with the salmon about 5 inches away from the heat source.
  5. Serve immediately.
