Ingredients
- 2-6 salmon fillets
- 3 tbsp pesto
- 2 tbsp fresh breadcrumbs
- 2 tbsp Parmesan cheese , grated
Steps
- Preheat oven to 325°. Flatten a piece of parchment paper on a baking sheet and place the salmon fillets at least 3 inches apart.
- Top each fillet with 1 ½ tablespoons of pesto and spread evenly to coat it well.
- In a bowl, mix the breadcrumbs and parmesan cheese. Again, top fillets with the breadcrumb mixture.
- Place the salmon in the oven and cook for 12-15 minutes for medium doneness. To get a golden brown crust, turn the oven to broil and heat for 1 min with the salmon about 5 inches away from the heat source.
- Serve immediately.
